Easy Marshmallow Frosting & a Dolled Up Cake Mix

I made these cupcakes for a surprise diaper shower the other day and thought I would share the recipe. It was super easy and Pinterest inspired! Plus marshmallow is my favorite flavor and I seriously ate the entire test batch, in slow increments that consisted of me shoving my finger into the marshmallow filled bowl for a whole day. Luckily I only made 1/4 of the recipe, it could have been much worse. 
Ingredients:
4 egg whites
1 cup white sugar
1 tsp vanilla

Directions:
Whisk sugar and egg whites in a double boiler until sugar is dissolved. Mixture should be pretty warm to the touch. It will take about 5 minutes. (I put my KitchenAid stand mixer bowl over a pot and got to work, it had a handle and was easy to work with.) Remove from heat, add vanilla, and beat on medium-high speed for 3 minutes, could take longer depending on humidity. Should be stiff and slightly resemble marshmallow fluff. 
*the first day I made it it came together in 3 minutes, second time took much longer because the humidity was 100%. 
This is a super cute way to make cakes for an event, plus it travels so well. I opted for this method mainly because I was riding alone to a restaurant and I don't own a cupcake or cake stand that I would want to travel with. I just plopped these puppies back in the mason jar box they came in and they traveled great.

To cake cakes in jars just follow the regular cake directions. When I baked them I put the jars in a deep baking dish so I could make it a water bath and kill two birds. One being that it is hard to get a dozen little jars out of the oven separately, and two I didn't want them to cook funny being in glass jars in yet another glass Pyrex dish so I added some water and made it into a water bath. Plus it helps keep them moist. Now for the secret way to doll up a box cake mix:

Best Box Cake Mix Ever:
1 box cake mix (follow regular instructions with eggs, oil, & water)
8 oz sour cream
1 package of instant pudding mix (chocolate for chocolate cake, etc)

Mix up your box mix according to the directions and simply add in sour cream and instant pudding mix. Bake according to the directions, you may need to bake for a few minutes longer depending on your oven and how moist the cakes are. It took about 5 extra minutes to get these how I like them.
