So on with 31 Days. This is where the week gets really easy as I show you have I turn one whole chicken into 4 meals.
Here is what's for dinner:
Crock-pot Rotisserie Chicken
Seriously I am not making any changes to this recipe except adding a little butter/olive to the bottom so it doesn't burn or stick, and just a little bit otherwise you end up drowning it after it lets out its juices.
What am I serving it with?
Roasted Brussel Sprouts and the other half of the rosemary focaccia I made the other day that hasn't been baked yet. Let's just say the yeast I bought was good, that dough has far exceeded the double state.
Roasted Brussel Sprouts
What you need:
1 package frozen brussel sprouts (they are cheaper)
garlic powder, salt, and pepper to taste
olive oil - enough to drizzle
What to do:
Thaw out brussel sprouts and preheat the oven to 425 degrees. Cut sprouts in half and arrange in a single layer on a baking sheet. Drizzle with olive oil and sprinkle with salt, garlic powder, and pepper. Bake for 15-20 minutes until the bottom starts to turn a caramel color and crisp up.
The first night I split one of the breasts between the two of us, and they are usually large when you buy a whole chicken. The second night I do the same and change up the sides (check back tomorrow for that). Finally the third night I make something totally different out of the thighs and it will last though night 4...if not a 5th night for at least one person.
