Since today is a leftovers day here I decided I wanted to feature other blogger's and their frugal meals on days this month when I am not cooking. Today's meal comes from Stephanie at A Modern Christian Woman, not only is it frugal, it is also a great fall inspired meal as well.
Lentils with Caramelized Onions, Sweet Potato, and Sausage
What you need:
2 tsp olive oil
1/2 lb bulk sausage (Stephanie used sweet garlic)
2 small onions
2 cloves garlic, minced
1 1/2 tsp cumin
salt & pepper to taste
1 sweet potato, peeled and diced
1 1/2 c lentils, rinsed and picked over
1/2 c jasmine rice
1 c chicken stock
1 1/2 c water
1 lemon
1/2 c chopped parsley or cilantro
plain yogurt
What to do:
In a large stock pot, heat olive oil over medium-high heat. Add sausage, onions, and garlic - cooking until browned and sausage is cooked though. Add in lentils, rice, sweet potatoes, and spices. Cook for 2 minutes. Add in water and chicken stock and bring to a boil. Drop the heat to low, cover, and simmer for 25 minutes until lentils and rice are cooked through. Add lemon juice and chopped parsley. Fluff with a fork. Serve with yogurt on the side.
