Just so you know, while I'm sitting here writing this I'm munching away at one of these bad boys.
I got the idea to make them after receiving a package of Hail Merry Macaroons in my April Birchbox. They were absolutely divine, gluten free, raw, vegan, and had an ingredients list nearly as short as a banana.
I was hooked.
What makes these so easy?
Well A) you don't cook them, and B) you make them super quick in the food processor.
They could take even less time if you just ate them with a spoon out of the bowl, but go ahead and spoon them out so no one looks at you with judgement.
Then again if you live alone there is no judgement. Go ahead and eat.
Am I the only one with a husband who questions my 10th brownie of the day?

We've been here nearly 5 years talking about how I have a sugar addiction so deep I could eat it with a spoon in a closet with the lights off.
Allow me to be the first to tell you this divine little recipe is rich enough that one macaroons will suit your chocolate hankering like a bucket of Nutella.
That doesn't mean I am eating only one today, sometimes a girl needs two buckets of Nutella to get her fix
I'm starting to sound like a crazy person now... let's just get to the recipe.
Paleo Chocolate Macaroons::
Makes 18 (possibly 20 if you quit eating batter)
Ingredients::
1/2 cup virgin coconut oil
5 tbsp Coco powder
3 cups unsweetened shredded organic coconut
3 tbsp organic coconut palm sugar
8 tbsp pure maple syrup (not the fake stuff)
1 tsp vanilla
Directions::
Place ingredients in a food processor and pulse until combined. It should start coming together similar to dough in the processor. Scoop out using a small cookie scoop and chill on a baking sheet lined with parchment for an hour. Store in the fridge.
