Every few months we stock up at Sam's Club, and whenever I need some I just thaw it out. It makes weekly shopping much easier, because I only have to buy veggies and determine what sides we are having or what I want to make that includes the meat we bought in bulk.
Changes::
replace peanut butter with >>> 2 tbsp almond butter (you can make your own)
replace soy sauce with >>> 2 tsp coconut aminos
Now for the side dish, it's my favorite cabbage on earth from Megan at In This Wonderful Life. With my paleo changes of course.
Here's how she makes it, with my changes in pink:
Ingredients::
2 tbsp vegetable oil or olive oil (olive oil or coconut oil)
1 med. Onion, chopped course
1 stick of butter (leave it out or splurge and get ghee, I just use olive oil)
1/2 LB raw bacon, chopped (Smithfield now makes natural uncured bacon... with no junk in it)
1 head cabbage, med-lg, course chopped
Salt/Pepper to taste

Heat oil in skillet over med-high heat. Add onion & bacon. Cook until onion is tender & bacon starts browning & getting crisp. Add butter, cabbage and s/p. Stir to coat. Cover. Cook for 10 minutes. Reduce heat to medium. Cover. Check for tenderness of cabbage. Repeat until done and then remove from heat. Taste best warm!

Seriously, Jeremy and I can put away a whole pot of this cabbage like it's nothing.
It's that good.
I also know I said to go minimal on your nut butters for the sake of your wallet, 2 tbsp won't hurt you. Just use it sparingly. If I have nuts on hand I would rather make my own than buying some, especially for the amount you need. A cheap little bag of raw almonds would do the trick.
Oh and if you feel adventurous, I've seen tutorials on how to make your own ghee (it from butter).
