Today's recipe is yet another super easy go to at our house.
It came about after watching my favorite Chef Gordon Ramsey on his BBC show The F Word. This is the perfect meal for a day you don't really fill like sitting in the kitchen for an hour, but really want good food.
Why I didn't photograph this, I'll never know. Don't be discouraged not to try it out in the current food blog world of photos upon photos, I promise you this tastes good.
Pan-Fried Rosemary Chicken
serves 2
Ingredients::
2 chicken breasts
2 tbsp olive oil
1 tbsp coconut oil (when I'm not worried about paleo I use butter)
rosemary
garlic
salt & pepper
thyme
Directions::
Heat oven to 380. Before placing chicken into an oven safe skillet pat off any extra moisture. Season chicken with salt and pepper and place in pan heated to med-high heat. Add garlic, thyme, and rosemary to chicken. When seared well, flip and place into the oven for 8-10 minutes.

Roasted Brussel Sprouts::
1 bag frozen brussel sprouts (usually cheaper than fresh but check)
garlic powder
kosher salt
olive oil
pepper
Directions:
Heat oven to 380, or 400 if not cooking the chicken as well. Grease a baking sheet with olive oil, slice brussel sprouts in halves and place on baking sheet. Drizzle with olive oil. Season with salt, pepper, and garlic powder to taste. Bake for 20-30 minutes until brown and crispy around the edges. (times varies based on how frozen the sprouts still are)
