With our Puerto Rico trip just a little over two months away, I'm getting serious on the slim down tactics around here... for myself at least.
[What is Meal Pinning Monday?]
MPM is how I meal plan for our little family. I once spent a lot of time searching the web and my recipe books hunting for new recipes and ideas for what to cook every week. Then, Pinterest came along and made meal planning much easier for me. Every weekend I look over what I have pinned the prior week and decide what I would like to cook and make my grocery list from these recipes. MPM came about as a way to share what I am cooking, and to also see what others are cooking every week to hopefully get even more dinner ideas from other bloggers. If you don't pin your recipes feel free to just share what you are cooking.
Every so often, while we've been married, I've enlisted a "cook separate" plan. I tend to eat healthier and lighter when I do this, so for the next few weeks it's green smoothies and salads for me.
There isn't exactly a Monday-Friday plan this week, I'm okay with repeating meals for sanity sake. So without further rambling, here's this week's menu... and no I have no clue what Jeremy has planned for himself or I'd fill you in on it.
Breakfast - Green Monster minus the dairy and add chia seeds. Actually my recipe has taken on a mind of it's own but is based off Iowa Girl's recipe. I do a cup of almond milk, 2 tbsp PB2, 1 frozen banana, 1 tbsp chia seeds, cinnamon, and fill the blender up with spinach.
Lunch - Salad with Grilled Chicken
Dinner - 30 Day Green Smoothie Challenge Recipe - This week I'm making the Vitamin C Immunity Booster Smoothie, but I can't find it on their site. It was sent in the challenge email, and I think there is still time to sign up.
Snack 1 - Quest Protein Bar
Snack 2 - Ranch Hummus and Veggies
