Lemon Lime Chia Fresca

One of my absolute favorite drinks on earth in kombucha, and when Synergy came out with their chia kombucha I nearly died from the happiness of having my two favorite things combined.


That said, my beloved kombucha turned out to not be the best on earth. The problem I ran into with it is that after contracting a ring worm from a student (I'm guessing, I'd been wearing crop pants the last month one year and had one on the only place skin showed.) and fighting that nasty booger at the doctor's office for ages I finally came across an article that said kombucha irritated candida.

I basically forced myself, against my own will, to nix my kombucha habit. One the kombucha was taken out of my diet I saw the lingering signs of candida vanish. If I start drinking fermented tea frequently the traces of the icky candida always reappear.

How could we solve this issue?

The back of a Bob's Red Mill Chia Seed bag apparently had my answer.

The result doesn't boast all the effects of kombucha, but the chia, lemon, and lime are great for your tummy. Plus chia is the only complete vegan protein.

In all honesty though, I have two main draws for chia seeds one being the texture (slightly caviar like) and the other being that they swell up with any liquid they come in contact with. Meaning, when the dry seeds hit your belly they make everything take longer to digest and you feel fuller, longer.


Lemon Lime Chia Seed Fresca


Ingredients::
serves 4
1 tbsp chia seeds
1/2 cup water
a few lemons & limes
stevia (liquid or granulated, about 1 tsp per drink)
seltzer water

Directions::
Soak chia seeds in 1/2 water overnight. After chia seeds have soaked, place 2 tbsp of chia/water mixture in a glass. Squeeze a few slices of lemon and lime into the glass, dropping the slices in the glass afterwards. Mix in stevia until dissolved. Top with ice and soda water & drink!


This isn't exactly an exact recipe, but the amount of citrus I add changes daily. I like to also mix it up with pineapple juice or orange juice. Or you could have all four for a fun citrus chia fresca.
