Flan might be my favorite dessert of all time, there's just something about custard.
I came across a recipe for a Paleo custard (that doesn't contain a nut flour... can I get a Amen!) and had to make it. Every Paleo recipe out there seems to contain some odd flour so when I find recipes that contain reasonable ingredients that don't cost stupid amounts of money I'm all in.
Since discovering it nearly two months ago I made this almost weekly.
I'm a dessert person so a cool creamy something at the end of the day is right up my ally, and keeps me away from Jeremy's ice cream.
3 Ingredient Banana Custard
Ingredients::
3 large eggs
1 can of full fat coconut milk
2 medium - large bananas
Directions::
Preheat oven to 350 degrees. Place 2 cups of water in a tea kettle or sauce pan to boil. Combine all ingredients in a blender or food processor (to save time I sometimes use my immersion blender in a large bowl). Pour mixture into 6 ramekins or small mason jars. Place in a glass dish with high enough sides to hold a water bath. Place jars in the glass dish and pour boiling water around the jars, careful not to get any in the custard. Bake for 45 minutes. Allow to cool in the water bath. Serve cold for thickest consistency. Top with fruit, or eat it as it is!
