We are an appetizer family, plain and simple.
My favorite part of Christmas is that on Christmas Eve we spend the day making every appetizer our hearts desire and chowing down that evening.
One of our long time favorite Christmas Eve snacks is Party Sandwiches, you know those lovely sweet rolls with ham and Swiss cheese. Covered in melted butter with Dijon and Poppy Seeds. They're to die for.
In coming up with a recipe for the Tresomega Organics for Life recipe challenge I decided to turn our favorite appetizer into a quick and easy week night meal.

I was pleasantly surprised when he said he loved this dish!
This creamy dish is made with gluten free quinoa and rice pasta and topped with our favorite grilled chicken. However, you could easily use any other meat you choose. Or go entirely meat free with this!
Party Sandwich Pasta
Ingredients::
Pasta -
8 oz box of Tresomega Gluten Free Penne Pasta
1 cup heavy cream
1 large egg yolk
1 1/2 tbsp Dijon mustard
2 tsp poppy seeds
2 tbsp butter
4 ox Swiss Cheese, cut into cubes
1 tbsp onion powder
1/2 tsp Worcestershire sauce
salt & pepper

Chicken -
2 chicken breasts
1 tbsp olive oil
1 tsp Worcestershire sauce
salt and pepper to taste
1 tsp Dijon mustard
1/2 tsp onion powder
Directions::
Pasta - Cook Tresomega Penne Pasta according to package directions. To make the sauce combine cream, egg yolk, mustard, and butter in a sauce pan. Whisking to combine over medium heat. After ingredients have come to a simmer add in the Swiss Cheese and simmer on low until melted. Stir in onion powder, Worcestershire, salt, pepper, and poppy seeds. Toss the pasta in the sauce and serve. Top with grilled chicken or any protein you prefer.
Chicken - Before you begin cooking your pasta, heat your grill to medium high. Place chicken in a large Ziploc bag or bowl and season to taste with the remaining ingredients. Allow to marinate for about 15 minutes and then grilled until cooked through.
