Y'all know I start on Thursday - so here we go.
Also, I had to bring myself to actually meal prep for work this week. I've been making chicken in the instant pot and just bringing that with rice... I can no longer eat such simple food. It just really isn't me. I need things that taste good.
Thursday | Easy Skillet Chicken Tinga Enchiladas
Friday | Pizza (Jeremy was at a graduation)
Saturday | Sunday School Class Game Night - we had Caribbean Pulled Pork Tacos and I have got to figure out how they were made.
It was pulled pork and white corn tortillas with cilantro, sour cream (made more like Crema), red onions (but they seemed like they had been pickled or such... but they weren't vinegary. Like I said I've got to pick the brain of the person who cooked.), jalapenos, salsa, guacamole, and a cole slaw that had pineapple in it. There's a ton to unpack from that meal lol!
Sunday | Raising Cane's Fundraiser for the youth group and dinner turned into Pickle Cookies. Hear me out on this one - it was full fledge things I did as a kid but recently rediscovered on Instagram Reels. Ritz topped with sliced pickles, cheddar cheese, and then put under the broiler for a hot second to melt. Strange, but so good. And no, no one else ate them.
Monday | Cobb Salad
Tuesday | Bacon Cheeseburger Skillet with a chopped salad (nothing pretty but it works for a low carb day)
Wednesday | Sam's Chick-fil-a knock off nuggets and fries (the kids fav and my fav on single mom night)
Lunch - I grilled bell peppers, red onion, mushrooms, cherry tomatoes, and pineapple - seasoned with Tony's and some bbq sauce. Then I seperately grilled chicken thighs with greek seasoning and lemon juice. These were intended to be kabobs but I did not have the desire to kabob anything last night.
